Yesterday I roasted a chicken on the grill, and today I pulled off all the meat to use for my upcoming meals. I put the chicken carcass and extra bones we had from grilled chicken the other day in my crock pot with onions and a few seasonings. I’ll keep it on low overnight, and then drain the chicken stock into a container to save and use for my white chicken chili later this week.
And for dinner tonight we had Chicken Philly sandwiches. They are so fast and easy, and here’s how to make them:
Gather all your ingredients: Oil, Pre-Cooked Chicken, Green Bell Pepper (I used two small ones), Onion and Mozzarella Cheese.
Saute the onions and bell pepper(s) in a pan, and once the onions start to look a little see-through, add in your chicken. Saute a little more until your chicken is nice and hot like the rest of it.
Serve on bread or hoagie rolls and top with mozzarella cheese. I wasn’t up for making hoagie rolls this evening, so we just had this on regular toasted bread. Spread a little mayonnaise on the bread if you prefer (I did it without, while my husband prefers mayonnaise).
And before I go to bed tonight, I’m going to prepare for Apple and Oats Breakfast Pudding in the morning.
