Cut Out The Junk: Baked Oatmeal Recipe (Breakfast)

I initially got this recipe from $5 Dollar Dinners.

Basically you pick out some seasonal fruit that you have like blueberries, strawberries, diced apples ect… and you make yourself a breakfast concoction out of some of the things on your grocery list for this week.

2 eggs
1/2 cup applesauce (can substitute yogurt)
3/4 cup sugar
1 cup milk
3 cups of quick cooking oats
1 tsp salt
1 Tbsp baking powder
2 Tbsp brown sugar
1 tsp ground cinnamon
2 cup fresh seasonal fruit
Vanilla or plain yogurt, cream, or milk

Mix it all together, put it in a pan and bake at 350 for 30 minutes.  Check out the full recipe HERE. This is a great and healthy breakfast food, but I think it would also make a great dinner!

    I didn’t quite have everything so I had to improvise and make some substitutions but man does this come out good!

  3. Tried this for lunch as we are over run with blueberries (they were $2.99 for 2lbs at Meijer a couple of weeks ago) -WOW!!! I made it with Old Fashioned oat but the rest of the recipe was the same, turned out GREAT!!! The oats were a little chewier than I make them on the stove top, but not too much so that I had any issue. Next time I think I’ll let the mix sit for 20 minutes or so before throwing it in the oven so the oats will be just right! THANK YOU!!!
