There’s nothing like a good banana bread to stuff my face with. Oh, you were thinking that I was going to say something along the lines of “serve nicely to guests with a spot of tea” eh?

Well, I suppose that is nice, too…

But I do so love a banana bread. I’ll make a loaf or muffins on a pretty regular basis, and absolutely love “healthifying” it up (that’s a word – I’ve decided) so that I can sneak good things into my kids.

Yes, I’m THAT Mom that will sneak greens and superfoods into the banana bread so that my kids are getting some goodness… don’t judge me.

But in all seriousness, it’s what we all want – We want our kids and our families to be healthier, but we aren’t sure exactly how to get them to eat good superfoods and greens all the time. That’s why I was so grateful for this amazing recipe from my friend Kristie, using Superfood Greens and Flaxseed!

It is completely vegan, gluten-free, and packed with amazing nutrition!

Here’s the super sneaky superfood banana bread recipe. It’s sure to be a hit, and get some goodness into those bellies.

Superfood Banana Bread Recipe

(makes 18 Muffins or 1 Loaf)


Directions (for muffins):

Preheat oven to 375 degrees and grease your muffin pan (I prefer coconut oil!). Add all ingredients into a mixing bowl and mix well.

Pour batter into muffin tins, filling 1/2 full. Bake for 10-12 minutes, until tops of
muffins are set and a toothpick inserted into the middle comes out clean.

Let those bad boys cool in pan for 10-12 minutes before removing. Store in air-tight container for up to 1 week.

NOTE: If you’re making a loaf, bake for 45 minutes to an hour, testing in the same way with a toothpick.
